Introducing Avigayil Simon

What is your major, and why did you decide to pursue this degree?
Graphic design, because I like art and wanted to find a way to be creative 

Why did you choose Binghamton University?
The Jewish community and all the programs and events they offer. I was also interested in the graphic design program here.

Where are you from?  Where did you go to high school?
I'm from Livingston, NJ. I went to Ma'ayanot.

What do you love about Jewish life on campus?
I love how big the Jewish community is and how there are so many opportunities to get involved. It was so nice to have a warm Jewish community as I came in as a freshman.

Do you have any siblings?
Yes, three brothers. Their names are Daniel, Aryeh, and Noam. I love being the only girl in my family.

Do you have a hobby?  Why do you love it?
I like drawing because it's a good way to relax and be creative.

What is your favorite Jewish food?  
Matzoh ball soup, my Oma makes the best matzoh balls.

What is your favorite food?
Soup, I'm a big soup person.

What's your favorite Jewish holiday and why?
Sukkot, I love being with all my family and being outside and really getting to enjoy nature.

What's your dream job?
Being an author, I love to read and as a kid I used to say that I wanted people to love reading as much as I do. 

What is your favorite Jewish childhood memory?
Probably walking to shul with my dad on Shabbos mornings. He talks to me in Hebrew and it was a great way to bond and build a love for going to shul every Shabbos.

What's your favorite lockdown experience?
Pesach, two of my brothers had covid and sat upstairs during the seder. We spent the whole seder screaming divrei Torah up and down the stairs and it was really funny.

What makes you proud to be a Jew?
Knowing that I'm part of a strong community with so many important values that help us get through tough times.

Best Hamantaschen Fillings:

With its signature 3 corners and delicious cookie like texture, hamantaschen are a Purim culinary staple. While everyone agrees about their deliciousness, there is a lot of debate about what exactly to fill it with. Luckily for you, we compiled the scientifically proven best fillings to bake the tastiest pastries

Chocolate Chips: A tried and true classic. Need I say more.

Jam/Jelly: Whether you call it jam or jelly, adding flavors such as strawberry, apricot, or raspberry is guaranteed to make your hamantaschen taste so good, it’s beyond human comprehension.

Peanut Butter: Peanut butter, or soy butter if you have allergies, is a less traditional but incredibly tasty filling. Feel free to combine it with chocolate chips to create the Jewish version of Reeses.

Brownies: Inserting raw brownie batter (preferably duncan hines) into a hamantaschen and baking it is an amazing way to combine the two into a masterful culinary concoction.

Chocolate Spread: For a Pesach themed hamantaschen, use the classic yellow cap chocolate spread for a scrumptious chocolatey treat.
